The headspace oxygen is almost immediately consumed by reaction with the product and with the tin of the can during the thermal process. Thus, the damage is done and the headspace oxygen is gone, preventing later analysis. One can measure only the results of excess oxygen: for example, increased levels of dissolved tin and
