Boeuf en daube (beef braised in red wine)

Ingredients

1.5kg diced beef casserole steak
2 brown onions, coarsely chopped
2 carrots, peeled, cut into 1cm-thick slices
2 celery sticks, ends trimmed, cut into 1cm-thick slices
6 garlic cloves, coarsely chopped
3 whole cloves
1 dried or fresh bay leaf
6 sprigs fresh thyme
1 x 8cm-strip orange peel
60ml (1/4 cup) brandy
1 x 750ml btl dry red wine
2 teaspoons olive oil
4 bacon rashers, rind removed, coarsely chopped
1L (4 cups) beef stock
140g (1/2 cup) canned diced tomatoes
1/4 cup chopp
