Pork & prawn fried rice

Ingredients

1/4 cup peanut oil
4 eggs, lightly beaten
500g Coles pork mince
2 garlic cloves, crushed
2 teaspoons minced ginger
350g Australian peeled raw banana prawns
1 celery stalk, sliced diagonally
2 spring onions, cut into 5cm lengths
2 x 250g pkts Coles Brand long grain microwave white rice
1/2 cup oyster sauce
1/2 cup water
1/4 cup dry-roasted cashews
1 long red chilli, sliced (optional)
