Baked pumpkin and herb crepes

Preheat oven to 200C/180C fan-forced. Spray an 18cm (base), non-stick frying pan with oil. Heat over medium heat. Pour 1/4 cup crepe mixture into pan. Swirl to cover base. Cook for 2 minutes or until light golden. Turn. Cook for 1 minute. Transfer to a plate. Cover to keep warm. Repeat with remaining mixture to make 8 crepes.
Step 4
Place 1 crepe on a chopping board. Spoon 1/3 cup pumpkin mixture onto crepe. Roll up to enclose filling. Place in a lightly greased 5cm-deep, 24cm x 30cm (base)
