Malaysian beef and eggplant curry

Ingredients

1 cup canola oil
2 large onions, halved, thinly sliced
2 garlic cloves, crushed
3cm piece ginger, peeled, grated
2 small red chillies, deseeded, chopped
1 teaspoon ground turmeric
1kg beef chuck steak, cut into 3cm cubes
400ml can coconut milk
1 eggplant, trimmed, cut into 5mm-thick slices
1 tablespoon tamarind puree (see note)
steamed SunRice White Long Grain Rice, to serve

Heat 2 tablespoons oil in a large saucepan over medium heat. Add half the onions. Cook,
