Ayam goring (Fried chicken)

Ingredients

1.8kg whole chicken
500ml (2 cups) water
400ml can coconut milk
1 brown onion, coarsely chopped
2 garlic cloves, bruised
2 dried bay leaves
1 lemon grass stem, tied in a knot
1 tablespoon brown sugar
1/2 teaspoon ground turmeric
50g (1/3 cup) plain flour
White pepper
Peanut oil, to deep-fry

Method

Step 1
Rinse chicken inside and out under cold running water. Pat dry with paper towel. Place chicken, breast-side down, on a work surface. Use poultry shears or sharp kitchen sciss
