Jumbo chocolate éclair

Ingredients

65g butter, chopped
3/4 cup plain flour
3 eggs
2 cups thickened cream
2 teaspoons icing sugar mixture
150g dark chocolate, chopped
Extra 20g butter, chopped
250g strawberries, hulled, thinly sliced

Method

1. Preheat oven to 220C/200C fan-forced. Line a large baking tray with baking paper.

2. Place butter and 3/4 cup cold water in a saucepan over medium-high heat. Bring to a simmer. Simmer for 1 minute. Reduce heat to medium. Stir in flour. Cook, stirring, for 2 minutes or un
