Vanilla creme fraiche chantilly
200g ctn creme fraiche
1 tsp finely grated lemon zest
1 tsp lemon juice
250ml (1 cup) pouring cream

Chocolate coating
150ml water
270g caster sugar
75g liquid glucose
250ml (1 cup) pouring cream (35% fat)
150g unsweetened cocoa powder, sifted
18g (4-5) gelatine leav
