10. Making the coating: Place the water, sugar, glucose, cream and cocoa in a saucepan over medium heat. Stir continuously, for 5-8 minutes so the mixture doesnt catch on the base or side of pan. Heat to 103C. Remove from the heat and cool to 50C.

11. Meanwhile, cut the gelatine leaves into small squares. Place gelatine in a bowl with the cold water and set aside to soak.
