Curtis' bircher muesli with apple, apricots and almonds

apple, oats, yoghurt, apple juice, and cinnamon in a bowl. Cover and refrigerate overnight.

Method

1. Mix apple, oats, yoghurt, apple juice, and cinnamon in a bowl. Cover and refrigerate overnight.

2. Meanwhile, in small heavy saucepan, combine the dried apricots, honey, and 1/3 cup of water. Bring to a simmer over medium-low heat. Simmer gently for about 10 minutes, or until the apricots are plump and the syrup thickens slightly. Cool completely.

3. Divide the muesli among 4 bowls. Top with
