Mango and pistachio friands

Ingredients

140g pistachios
1 1/2 cups icing sugar, plus extra to dust
1/2 cup plain flour
6 egg whites
185g butter, melted, cooled
1/2 mango, thinly sliced

Method

1. Preheat oven to 200C or 180C fan. Grease a 10-hole, 1/2 cup friand pan. Process pistachios in a small food processor until ground. Transfer to a bowl. Sift over the icing sugar and flour.

2. Use a fork to whisk egg whites in a large bowl until frothy. Add butter and pistachio mixture. Stir gently until just combined.
