4. Meanwhile, to make the coffee syrup, combine the sugar, water and coffee in a medium saucepan over low heat and cook, stirring, for 5 minutes or until the sugar dissolves. Increase the heat to medium and bring to a gentle simmer. Reduce heat to low and simmer for 4-5 minutes or until the mixture thickens slightly.
