Home-style lamb casserole

Ingredients

2 tablespoons olive oil
1.5kg diced lamb
2 medium brown onions, chopped
2 medium carrots, peeled, chopped
2 celery stalks, chopped
2 garlic cloves, crushed
2 cups beef stock
2x 400g cans diced tomatoes
500g orange sweet potato, peeled, cut into 2cm pieces
250g cauliflower florets
1 1/2 cups couscous
20g butter, chopped
1 1/2 cups boiling water
1/4 cup chopped fresh flat-leaf parsley leaves
