French roast chicken with whole garlic

You will need unwaxed cooking string.

Ingredients

1 large lemon
2 1/2 tablespoons extra-virgin olive oil
4 garlic cloves, crushed
1 teaspoon sea salt
1.7kg free-range whole chicken, cleaned, rinsed, patted dry
4 sprigs thyme
4 bulbs garlic
potato mash and steamed green beans, to serve

Method

1. Preheat oven to 190C. Cut lemon in half. Juice 1 half.
2. Combine 2 tablespoons lemon juice, 2 tablespoons oil, crushed garlic and salt. Season with pepper. Rub baste over
