Cumin / Jeera
Cumin comes from western Asia and has a very long history. The Egyptians knew of it more than 5,000 years ago: It was discovered amongst the burial artefacts in the pyramids. It was an important spice in Greek and Roman cuisine.
Cumin tastes strongly aromatic, tart, bitter and penetrating but is also slightly sweet and earthy. Despite the similarity between its appearance and that of caraway, cumin tastes entirely different. The fruits contain up to four percent essential oil.
